OUR FAVOURITE TIME OF YEAR

Archie: Why is Santa going to town, mama? What is Town? Why does he have reindeer? But why do they fly? How does he know where I live? Does Santa have blood?...
...the only thing I know is that Santa may need an extra nip in her Eggnog tonight! Isn't it wonderful how children put the magic back into Christmas? It's always been my favourite holiday, but the face of wonderment as I tell Archie stories of Santa, the reindeers and the North Pole, fills my heart with so much joy. His bedroom has the only chimney in the house, so I made him his own little Christmas cave to enjoy. I often spy him in there singing "tismas tree, tismas tree.." to the tune of Jingle bells. #heartmelt We've made a few emergency texts to Santa, but on the whole he has been an awesome little guy and I can not wait to see his face tomorrow morning when he see's what Santa has brought him.
Today we're baking treats for Santa and Rudolph while we listen to our favourite Christmas songs. To spread the cheer I thought I would share my favourite Egg Nog recipe and all time fave Christmas song- sending love and peace to all those who need it a little more this time of year and of course, wishing you and your family love, laughter & lots of food. JAMIE OLIVER'S ULTIMATE EGGNOG RECIPE
Serves 8
- 3 cups (700ml) whole milk
- 1 cup (240ml) heavy or double cream
- 3 cinnamon sticks
- 1 vanilla bean pod, split and seeds removed
- 1 teaspoon freshly grated nutmeg, plus more for garnish
- 5 eggs, separated
- 2/3 (130g) cup granulated sugar
- 3/4 cup (175ml) Bacardi Dark Rum, or bourbon
In a saucepan, combine milk, cream, cinnamon, vanilla bean, vanilla seeds, and nutmeg. Bring to the boil over a medium heat. Once boiling, remove from the heat and allow to steep.
In a large bowl or stand mixer, beat egg yolks and sugar until combined and thick ribbons form when the whisk is lifted. Slowly whisk in the milk and continue to mix until the mixture is combined and smooth. Add bourbon or rum, and stir. Refrigerate overnight or for up to 3 days.
Before serving, beat the egg whites in a large bowl or stand mixer until soft peaks form. Gently fold into eggnog until combined. Serve and garnish with freshly grated nutmeg.
