THE BEST GLUTEN & SUGAR FREE SELF SAUCING PUDDING

Everyone loves pudding- especially on a cold winter's night. This recipe from The Merry Makers Sisters is quick, healthy and most importantly delicious. Yep, the trifecta! Perfect to satisfy every craving.

YOU'LL NEED

  1. 2 eggs lightly beaten
  2. 1/2 cup almond meal
  3. 1/3 cup coconut milk (canned)
  4. 1/4 cup raw cacao powder
  5. 1/4 cup coconut oil
  6. 2 tbs. natural sweetener
  7. 1 tsp. 100% vanilla extract
  8. 1/2 tsp. apple cider vinegar
  9. 1/2 tsp. baking powder

FOR THE CHOCOLATE SAUCE

  1. 3/4 cup boiling water
  2. ¼ cup raw cacao powder
  3. 2 tbs. natural sweetener
  4. 1 tsp. 100% vanilla extract

NOW WHAT

  1. Preheat oven to 180°C (350°F).
  2. In a mixing bowl combine all the pudding ingredients.
  3. Transfer the mix into 2 x 10 cm (4 inches) ramekins.
  4. In another bowl mix together all the chocolate sauce ingredients until super smooth.
  5. Carefully pour half the chocolate sauce on top of each of the puddings.
  6. Place into the oven for 25 minutes.
  7. Eat it!

Serve with coconut yoghurt and berries or whatever your heart desires!
